Dewi salad in Bali
For me, this salad represents everything about Bali. It's naturally beautiful and it tastes like heaven!
In Bali I found a little corner of paradise. Dewi's house. It is one of the most peaceful places I have stayed. Just two nights rejuvenated me for months.It was surely Dewi's welcome and smile. But also his food. On her home cooking menu, as many choices as in a large restaurant. A huge variety. And what about the flavors. I had read that she cooks well before booking this short stay. But honestly, I didn't expect so much.
All the meals I have eaten there have been beyond delicious. I couldn't reproduce them all. I don't know all his secrets. But she was kind enough to tell me what she put in this salad that tasted like heaven. A real breath of fresh air, in all simplicity.
*The quantities are not bad to taste! Ingredients may vary depending on what you have on hand!
Ingredients
A can of red broad beans, drained and rinsed
2 carrots, cut into small cubes
1/2 English cucumber, cut into small cubes
15 sugar snap peas, cut into small pieces
One red bell pepper, cut into small cubes
One mango, cut into small cubes
1/3 pineapple, cut into small cubes
The juice of a lime
2-3 tbsp. olive oil
1 tbsp. maple syrup
Salt and pepper
Mix all the ingredients and enjoy!
Adjust the seasoning as needed (acidity with lime, salt and pepper)
*I added a little mint, since I had some!
