Sahlab, sweetened hot milk from the Middle East

For me it's a pure pleasure to sip, and for the children too! 

It's the perfect drink for cold spring break days!

I first drank Sahlab a few years ago in Jordan. My friend Abdallah had carefully prepared it for me and I loved the comfort of this elixir!

 

For 4 glasses

2 cups of milk (or almond milk, soy milk...)

2 tbsp. cornstarch

1/8 to 1/4 cup of sugar (I used 1/4 cup of maple sugar, it was delicious but very sweet!)

1/4 to 1/2 tsp. rose water (optional, you can also make it vanilla)

For the topping:

Cinnamon or Apple Pie Spice Mix A Spice Affair (15% off my shop)

Crushed pistachios (or walnuts)

Unsweetened shredded coconut

 

In a saucepan over medium heat, heat the milk gently. Before it is hot, add cornstarch and whisk to break up lumps.

Add the sugar, heat while whisking until the texture thickens. We want a texture a little thicker than maple syrup. Add rose water and stir.

Pour into glasses, then add the crushed pistachios, cinnamon and coconut. Enjoy in good company!
