Fig pizza as good as life
She tastes the sky. And Middle Eastern figs are pure elixir. I will therefore dedicate it in honor of peace between Palestine and Israel, and an injustice towards the Palestinians which I hope will disappear.
For 4 people
1 pizza dough (see Alhasaf pizza dough recipe here)
Olive oil
Goat cheese (I took the goat gouda from the Bergeron cheese dairy)
Any smoked or dried meat (I had a fabulous smoked ham from Chef Vincent, otherwise smoked duck, serrano ham, etc.)
A few fresh figs, quartered
Arugula
A little goat feta cheese, crumbled
Lemon juice
Balsamic reduction (or balsamic, I have a Greek fig balsamic product here)
Salt and pepper
Preheat the oven to 425F.
Roll out the pizza dough. Drizzle the olive oil into it. Pepper. Add pieces of cheese and ham here and there.
On a baking sheet, or a pizza stone, put in the oven for about 15 minutes, until the cheese is golden, the dough is well cooked to the center.
Out of the oven, lay out the pieces of figs, the arugula, the feta. Pour a drizzle of olive oil and balsamic. Salt and pepper. Finish by "squeezing" your lemon on top to put a little juice everywhere.
