Don't touch my fattouche
This has been a classic for me for years, long before I visited the Middle East!
There are several recipes, but here is a simple one that you can make in a jiffy.
For about 4 people, as a side
3 tbsp. tbsp olive oil
2 tbsp. tbsp lemon juice
1/2 English cucumbers, diced
3 radishes, thinly sliced
1/2 bell pepper, diced
1 cup torn romaine lettuce
1 tomato, diced
2 green onions, minced
Parsley and mint, to taste (for me a lot is the best!)
Sumac
Salt and pepper
For pita croutons: 1 pita bread about 20 cm (8 in) in diameter, torn into large pieces
For the croutons (if desired):
Preheat the oven to 180 °C (350 °F). Line a baking sheet with a silicone mat or parchment paper.
In a large bowl, combine the bread pieces and 3 tbsp. oil. Add salt, pepper and mix well. Spread onto baking sheet and bake for 15 minutes, tossing twice, or until golden brown. Leave to cool.
For the salad:
In the same bowl, whisk together the remaining oil and lemon juice. Salt and pepper.
When ready to serve, toss the vegetables and pita chips in the bowl with the dressing. Adjust the seasoning.
