The Ultimate Thai Salad
Need sun? Want freshness? This indulgent salad may not be authentically Thai, but it's absolutely delicious (and easy to make).
Here are the ingredients, without precision for the process, because the assembly of your salad remains at your discretion (you can surely do better than me, hahaha!).
For 4 people
2 carrots, grated or cut into thin juliennes
1/2 cucumber, cut into thin juliennes
2 mangoes, cut into thin juliennes (or cubes)
2 cups cooked rice noodles
Kale sprout (optional)
8 boston lettuce leaves
Fresh cilantro, to taste
Sesame seeds
1 cup roasted peanuts (take the time to roast them in a pan, it makes a difference!)
8 fried spring rolls, or imperial rolls
Vaigrette
4 tbsp. tablespoon rice vinegar
2 tbsp. tablespoon maple syrup
4 tbsp. fish sauce
4 tbsp. toasted sesame oil (special mention to that of Maison Orphée, it's phew!)
2/3 cup neutral oil (canola, sunflower, grapeseed...)
Hot pepper flakes (optional and to taste)
