The best zucchini croquettes

Thank you to the beautiful entrepreneur Nathaly Riverin, president of Canary Red et de la Pop-up gardening boutique, for sharing her must-have recipe when she receives in the summer! A recipe she learned in Greece!

For about 9 kibbles

 

2 cups grated zucchini zucchini
1 tbsp. salt
1/4 cup parmesan cheese
1/3 cup feta cheese
1-2 tbsp. mint
1 egg
1/4 cup breadcrumbs or 8 crushed soda crackers
2 green onions, finely chopped
3-4 tbsp. tablespoons flour (depending on the initial texture of the croquettes)
Pepper
Olive oil
Yogurt or other sauce of your choice

Preheat the oven to 350 F or 180 C.

In a bowl put the zucchini and salt. Leave to stand for about fifteen minutes and squeeze them to remove the water from the zucchini.

Add the other ingredients. The texture should allow the mixture to hold together.

Drop by spoonfuls onto a baking sheet lined with parchment paper. Cover with olive oil.

Bake for about 15 minutes, until golden. Flip them over and cook for another 5 minutes to brown the other side.

Enjoy with plain yogurt (or garnish with lemon juice, salt and pepper).
