The addictive fall cake (with zucchini, apple pie flavor!!)
You know, I'm a sold spice A Spice Affair. Quality products, without unnecessary additions, as if I were making them at home. A local company, with a passionate entrepreneur.
I was intrigued by this wonderful flavor of the Apple Pie mix. So I improvised this cake, reminiscent of colored leaves... OMG, I didn't regret it! I said that it has a little taste to come back to it! My neighbor bluntly said: "it's addictive"! One thing is certain, the secret is in the spices!!
Plus: it does away with your excess applesauce and giant zucchini!! Haha!
Don't leave it lying on the counter! DANGER!!
Makes 1 cake (about 8 servings...)
2 cups all-purpose flour
2 c. baking soda
1 c. salt
3 c. A Spice Affair Apple Pie Mix
1/4 c. baking powder
3 eggs
1/2 cup applesauce
1 cup sunflower oil
3/4 cup sugar
2 c. vanilla extract
2 cups grated zucchini (+/- 2 zucchini)
1 cup raisins
1 cup chopped pecans
Preheat the oven to 350°F (175°C). Butter and flour a 13x9-inch Pyrex baking dish.
Sift together flour, baking soda, salt, cinnamon and baking powder; reserve.
In a large bowl, beat the compote with the oil, sugar and vanilla, until well blended. Add the zucchini. Then stir in flour mixture; beat until blended. Finally stir in the raisins and pecans. Transfer to baking dish.
Bake for about 40 minutes, until a toothpick inserted in the center of the cake comes out clean.
